A week of easy lunches: Day 7
Live Well for Less
VCC chef Hamid Salimian presents a week of lunches that are easy, tasty and inexpensive. Here is the final recipe in our series, where our chef serves up some homemade fried rice.
Ingredients:
- 150 grams of ground meat
- 1 tbsp. ginger
- ¼ cup onion
- 1 tsp. garlic sliced
- 2 tbsp. Hoisin sauce
- Leftover rice
- Scrambled eggs left over from breakfast
- 6 Shiitake mushrooms
- ¼ cup cilantro
- ½ Serrano chili, sliced
- Dried chili
- Vegetable oil
- Sesame seed oil
Steps: Making the stir fry
- Make sure pan is nice and hot. Coat the pan with oil, but make sure not to use too much.
- Caramelize onions once the oil is heated.
- Add mushrooms and eggs. Crisp up the rice for several minutes in the pan. Add chilis, Hoisin and meat. Serve topped with freshly cut cilantro.
