Baking and Desserts 2 (CULI 2450)

Students prepare cream pies, puff pastry, choux pastry, yeast goods, cakes and cookies. Puddings, baked desserts, fruit desserts and gelatin desserts are introduced at this level. Emphasis is based on methods of preparation and on artistic presentation.
