Baking and Pastry Management

This diploma program is designed to meet a growing need in the baking industry for supervisors and managers to work in a wide range of establishments such as bakeries, restaurants, hotels, and supermarkets. Graduates will learn the fundamental business skills needed to succeed in the industry or open their own business.

Program Description

This program is 15 weeks, full-time. Building on basic management skills acquired in the baking and pastry arts certificate program, students will acquire skills and knowledge in key disciplines required for modern management, through a combination of theoretical course work and hands-on experience. This program has been designed to involve the students in a variety of learning environments and instructional delivery methods. Throughout the program students will participate in lectures, seminars, small group discussions, role plays, labs, hotel and restaurant settings, and hotel simulation.

Admission Requirements

General

VCC welcomes applications from Canadian citizens and permanent residents.


As Vancouver Community College is a post-secondary institution committed to educating adult learners, applicants should be 18 years of age or older or a graduate of a secondary school.

Program Specific

  1. Grade 12 graduation with English 12 or equivalent.
  2. Successful completion of VCC's baking and pastry arts certificate or equivalent.

As seats are limited, final selection of students is made by the dean and department head.

  • Ability to communicate effectively in oral and written English
  • Good interpersonal skills
  • Basic computer keyboarding skills

VCC is accepting applications from international students.

Only six students per term are selected. Those who have applied and met all admission requirements go through a faculty selection process.

Additional Information

Graduates earn a VCC diploma upon successful completion of the baking and pastry arts management program and the VCC baking and pastry arts certificate program. Management courses listed must be completed within two years.
